1lb frozen peas, thawed
1/4c carrots shreds, chopped 1T red onion, minced 1/4c red bell pepper, finely chopped 2T olive oil zest and juice of one lemon, half zest reserved 1T white balsamic vinegar 3-4 sprigs fresh mint, approx 1/4c roughly chopped 1t pink Himalayan salt 1/2t cracked pepper Mix all ingredients well and let sit in fridge at least 30 min or longer before serving. Top with reserved zest. I saved the tops of the mint sprigs for garnish. So pretty! |
This is such an easy, refreshing, colorful salad. Perfect for May's Juice Plus+ theme of Color Your Plate! When I was meal planning this morning, I knew I needed a dish I could easily get to school for the Teacher/Staff Appreciation Week Potluck, and I thought this would be delicious and colorful. Plus, I had all the ingredients. Win.

My goodness the days are just getting away from me!! I've been cooking and gardening away, as well as doing our normal family stuff and have had NO time to blog! So, here's a quick update on what I've been up to and some of my new favorite things! This week I tried out:
Each month Juice Plus+ has a new theme, and this month we are staying #activeinapril. We are making an effort to get the entire family out for some fresh air and exercise each day. The 7 Minute Workouts have been easy to fit into our busy schedule, and I definitely feel sore the next day after a workout. Ideally I'd like to do more than one a day, but until my beautiful little mini me's stop waking me up at night, one is better than none!

The most important part of healthy living is surrounding you and your family with fun, friendly people who like to be healthy too. If you don't make it fun, you just won't keep up with it! We have the most amazing network of friends and family that we have such a great time sharing food, drinks, games, stories, trips to our family lake house, or even meeting at our neighborhood park and pool. Some we met through Juice Plus+ and Tower Garden events; some from school; so many are right here in our awesome neighborhood. I have said more than once, it takes a village to raise a family and I'm so proud to be a part of this village. Back in September I was honored to be a guest speaker alongside two amazing doctors, Dr. Valerie Miles and Deb Harrell, ND, for a webinar called Health and Hope. We are especially lucky to have Valerie as our pediatrician here in Jacksonville. She introduced us to Juice Plus+ back when my nearly 8 year old was just a baby and it's always a treat to hear her speak. We were incredibly lucky to meet Deb through our Juice Plus+ team. Not only is she valuable for health and wellness information, but she and her husband, Tim, give us great advice on our Tower Garden growing! You'll here me talk about them often.
